Sodium sulphate in the food industry

Sodium sulfate, chemical formula Na₂SO₄, is one of the salts. In the food industry, sodium sulfate is widely used because of its unique properties and functions.


Firstly, sodium sulphate has thickening and moisturising properties. In many food products, a certain humidity and consistency are required to maintain taste and texture. For example, when making baked goods such as bread and cakes, adding an appropriate amount of sodium sulfate can enhance the viscosity and elasticity of the dough and improve the taste and quality of the finished product.


Secondly, sodium sulfate also has a preservative effect. It can destroy the cell walls of microorganisms through the penetration effect on their cells, leading to the death of microorganisms or inhibiting their growth. Therefore, adding an appropriate amount of sodium sulfate during food processing can effectively extend the shelf life of food and reduce the risk of spoilage.


In addition to the previously mentioned moisturising, preservative and other applications, sodium sulfate has a variety of other uses in the food industry.
1. As acidity regulator

In some food processing, the acidity of food needs to be adjusted to enhance its flavour or to meet specific process requirements. Sodium sulfate can be used with other acidic substances as an acidity regulator to help control the acid-base balance of food. For example, in pickled food, sodium sulfate can be used together with other salts to promote the formation of acidity in the food and make the pickled food more delicious.


2、As anti-caking agent

In the process of food processing and storage, certain food ingredients may be crystallised and agglomeration may occur, affecting the quality and taste of the food. Sodium sulphate can be added to food as an anti-caking agent to prevent the caking of food ingredients by interfering with the crystallisation process. This plays an important role in maintaining the fluidity and homogeneity of the food and extending the shelf life.


3、As a co-solvent
Sodium sulfate has high solubility in water and can be used as a co-solvent in food processing. It can help other difficult to dissolve food ingredients better dissolved in water, to promote the uniformity and stability of the food system. 4、Application in dairy products

5、Application in meat processing
